YOu should go to a jeweler and have the rings apprised. With that being documented, you can sell them by posting add on craigslist, or try Ebay. Im sure you can get more for it than a pawn shop will offer.

Put them on eBay. You can set a reserve price and if it’s not met you don’t have to sell.
Try selling them on ebay, or advertise in your local paper.

Try selling your items on eBay. If you have an appraisal of the one carat diamond put that in your listing. You can also have a “Reserve” put in the listing (meaning the bottom line amount you will accept) and the reserve must be met by the bidders in order to win the auction. I believe you can still sell it to the highest bidder even if the reserve isn’t met, at your descretion. Do some research on eBay, it’s not hard to do at all. You will probably get more for it on eBay than from any jewelry store. Good Luck!
