I have a 35 year old solitaire heart shaped diamond wedding ring (5/8), and I am thinking about having it remounted into a nicer band. My question is: how do I know that the jeweler will give me back my own diamond and won’t replace it with a lesser quality or cu. zirconium?

Ask several people you know who they may have used for jewelry work in the past - a personal referral is your best option in general. I would also suggest checking to see if there are any complaints against the jeweler with the Better Business Bureau or local police.
